One of the things I don't do is cook.
When Mitch & I dated and we were first married I was a recipe cook. Then, we renovated our kitchen in Kentucky and Mitch started spending more time in that space. What we discovered is that he is chef. So, I don't cook because my husband is just plain better at it.
However, I do make one dang good salsa by recipe. This comes out of Hobby House Hill Cookbook, which is where I go on my scrapbook retreats. This is not a spicy salsa because I don't eat hot foods. It is very, very tasty.
Albuquerque Salsa
1/2-1 chopped yellow onion (I like white or red onion)
5-7 chopped green onions (I lean towards 7)
2-3 chopped fresh tomatoes (If using Roma tomatoes, which are juicier then have about 5-6)
1/2-1 chopped bunch of cilantro (leaves only) (I lean towards 1/2 a bunch)
Mix all above together and then add:
1-2 cans chopped tomatoes (2 cans petite diced)
1-2 cans Ortega Green Chilies diced (1 can)
1/3-1/2 cup water (I skip this part)
Add to taste:
Garlic Salt (I'm heavy with the salts)
Garlic Powder
Salt
Pepper
Dash of Oregano
1/2 tsp. crushed red pepper (I only use a pinch)
I chop but then mix in the food processor to get the right consistency. Keep refrigerated. Serve Cold.
